Can you go without eating meat for a week? NBCLX storyteller Bianca Graulau tried a vegan diet to see if she could give up her meat habit. After learning some lessons, she’s sharing her tips for trying a vegetarian or vegan diet for the first time.

Americans’ meat eating habits are not only bad for our health, but also contributing to climate change. Raising livestock for consumption produces the greenhouse gas methane, drives deforestation and causes water pollution. North Americans eat six times the recommended amount of red meat, according to a 2019 report by the EAT-Lancet Commission.
